I think a healthier version could be made with low fat cheese and real potatoes instead of tater tots. We've got most of the ingredients and what we haven't, I can adapt. (substitute Tater Tots for thin-sliced fresh potatoes or kumara (NZ sweet potatoes). Cilantro bolts to seed fast in our climate but we have Vietnamese Mint which tastes the same but with a chilli tang.
