13/29 for the #29in29

Day Thirteen in the 29 in 29 Photo adventure.

Saturday when driving Meg to Eugene to pick up her new Triumph she offered to buy us lunch in exchange for the ride. Not necessary but it was welcome since we were hungry. When she asked where we'd like to go we replied "Cornbread" as in the Cornbread Cafe - our go-to vegan restaurant. It is 100% vegan and is billed as Southern inspired vegan comfort food.

Luckily Meg and her husband Josh are open minded omnivores and we've gone to the Cornbread with them before and they enjoyed it. I've tried several things on the menu, but after having the 'Eugenewich' I haven't been able to try anything else. It is that good.

The Eugenewich is described as: "A southern fried tofu patty with melted Daiya cheddar, deep-fried carrot slices, hand-breaded onion rings, shredded romaine lettuce, and tomato with smoky sauce on a grilled Bread Stop bun. Throw on a bib and hang on." - all for only $9.

I remembered to bring my camera on Saturday and was able to get some food porn.

If you are ever in Eugene I highly recommend giving the Cornbread Cafe a try. You won't want to eat anywhere else in town, we don't.

  1. I seem to be the only one I know who doesn't particularly care for bacon. On the other hand, those deep-fried carrot strips with a nice smoky sauce have my mouth watering. Cool idea.

    1. I used to love bacon, but bacon didn't love me back. I really don't miss it but have found that a little liquid smoke does the trick for making sauces and things tasty.

      We haven't tried making our own fried carrots but it is neat how they look like bacon.

    I LOVE TOFU ! but have never tried it as a burger patty. I was just dreaming of a hamburger on my way to work, from the dentist this morning.

    1. It is really good as a burger patty. I have a recipe for southern fried tofu made in the oven and I think it would work well to make this burger at home. Luckily the waitress gave us the recipe to the smoky sauce.

      And I found a recipe for vegan oven baked onion rings. Now if I can just find the time to put it all together......

    1. I couldn't do a 29 day challenge without putting at least one day of food porn pictures in.

      Lunchtime here too. Leftover homemade red potato and onion soup. Yumm.

  5. Mmmmmmm... I think. I've never eaten tofu before... not sure I ever will. But it still looks good... I think. lol!

    1. Tofu is great if prepared right. If eaten alone it doesn't really have a flavor. And the right kind of tofu needs to be used to different recipes.

      I have a recipe for pumpkin tofu cheesecake that is really yummy.

  6. So I'm listening - pumpkin tofu cheesecake, can't go wrong with the words cheese and cake in a recipe. I love veggie burgers way too much for a carnivore I think.

    1. I'll have to make one of the cheesecakes and post the recipe with pics. Somehow I don't think Troubadour will mind me making one for bog fodder. He gets to eat the results.

    1. Hooray. I am sure you would enjoy it. Meg had an 'un-chicken' salad sandwich. It was served on Dave's Killer Bread. She said it was really good. If I can tear myself away from the Eugenewich I'll give it a try. Cornbread is really easy to find too. It is on the corner of 7th and Polk downtown.
